Sometimes all you want is a good old classic to serve your parents or maybe grandmother, without them noticing the eggs and dairy aspect of it all. This is when you should bake this failsafe marble cake.
Next to actually learning how to bake, writing a cookbook also has the advantage of expanding your tastebuds. One thing I didn’t know before starting to work on Fuck Diet! was how much I actually love lemon as part of a cake. It all began as a research project on how to do vegan pasteis de nata or pasteis de nata at all for that matter. As I used to live in Portugal and was already back in Austria for a while, I really started to miss my favourite mini-cakes. But instead, another tart caught my eye and led me to discover a recipe for vegan lemon curd, that I use not only to make tarts, but also to dip any cookie within reach into the leftover curd for the next week or so.
Ladies and gentlemen! May I introduce you to my favourite cake ever? I see this one as my ultimate staple cake. The chocolatey smoothness, zesty kiwi and down to earth coconut semolina make it a birthday favourite but I have to admit I have a hard time not eating it straight out of the pan every time I get to make it.
My Grandma does a mean, mean Peach Cream Cake. Why is it mean you say? Well because it makes me lose every last ounce of self control I have ever had in front of cakes. I am talking of having 6-7 slices as opposed to two or so, so I couldn’t resist the temptation to get her recipe and to try to make a vegan version of it.
This week summer has fully arrived in Europe. In the heath I have a hard time eating cakes, but friends don’t stop having birthdays just because it’s hot and even after a beachside BBQ folks could definitely do with a dessert. In those cases this cool pie can help me out. It’s not too hard to do, but does require a bit of preparation, It’s for the best if you get the ingredients the day before as you will be making your own vegan version of cream cheese. Ah Blueberry Muffins! You either love them or you like totally adore them! They can be sweet – they can be bitter, they can be fancy with lemon zest or just vanilla! I must admit that you cannot hand me a blueberry muffin and expect it to still be there two to five minutes later, although this, of course, also depends on the size of the muffin!
Seriously – what is the next best thing to a chocolate cake? Brownies of course! Whether dense and rich or doughy but coated, a proper serving of brownies can easily leave a chocolate tart behind.
